The "Gougères" recipe
Small pastry shells with Swiss cheese
1. In a pan, pour the water with a pinch of salt and add the butter
2. As soon as the butter has melted and the water has started boiling, remove the pan from the stove and add all of the flour in one measure. Stir vigorously to absorb the water and avoid sticking.
3. Then add the eggs one by and add the grated cheese. Leave the pastry in the fridge for 30 minutes.
4. Heat the oven to 200°C
Place the pastry in small mounds with gaps on the shelf to bake.
Bake for 20 to 30 minutes.
Warning : Do not open the oven while baking.
