Size: its purpose is to direct and regulate the vegetation and improve the fruit of the vine. Champagne size following specific regulations.

Period: November to April

There are three types of size: Guyot simple, Chablis to 5 frames,Royat cord.

Bonding: The wood left after the size attached during March and April.

The draw:at the conclusion of the assemblies, comes the edition which is the bottling with addition of liqueur of edition. This liqueur of edition consists of sweet wine and yeasts. It is these ferments which are going to be at the origin of the foam grip.

Natural carbon dioxide created by fermentation that will fit the wine becomes sparkling under a pressure of 5 to 6 kg.

This wine is now slowly aging in a horizontal position for 3 years.

This second fermentation causes the formation of a natural deposit bottles to be extracted. To extract the deposit bottles are placed in the neck desks slightly turned down. Every day forthree weeks, the bottles are moved 1/8th of a turn. So day after day, the bottle is gradually adjusted until it reaches the vertical position, neck down. The deposit has slowly slid into the neck of the bottle.


Draining: it is then necessary to expel the deposit(warehouse) accumulated in the collar(pass). The collar(pass) of the bottle is plunged into a réfrigèrante solution so favoring the training(formation) of an ice cube which imprisons the deposit(warehouse), the ice cube is then expelled.

Then, it is put that the liqueur of expedition(shipping) consisted of old wines and cane sugar which allows to differentiate the crude oil(gross salary), of the semi-dry, of special raw(gross).

It does not more remain than to close the bottle with this cork so particular in Champagne in cork, blocked(surrounded) by the muselet.

To finish the bottle dresses its dressing, different according to vintages.
